Slow Cooker Beef Bourguignon

Delicious slow cooker beef bourguignon recipe made from flavourful Roadapple Ranch stewing beef – a great way to ease into the cool fall weather! This basic recipe can be spiced up any way you like it. Serve with a slice of tomato on the side, or how about some steamed broccoli or organic swiss chard!

Slow Cooker Beef Bourguignon (serves 4-6)

  • 1 lb Roadapple Ranch Stewing Beef (can be frozen)
  • 1 large sliced onion
  • 1/3 bottle inexpensive dry red wine
  • 2 tbsp tamari sauce
  • 1tbsp rice vinegar
  • 1 tsp hot mustard powder
  • 1 tsp garlic powder (or 3 cloves of fresh chopped garlic)
  • 1/2 tsp ground sea salt
  • 1/2 tsp dried rosemary (or 2 sprigs of fresh)
  • 1/2 tsp freshly ground black pepper
  • 8 oz sour cream (use the good stuff!)
  • 2 cup hot boiled potatoes
  • 1/8 tsp dried dill (if desired – or 1 sprig of fresh)

 

If cooking from frozen, use warm water to help remove paper from the stewing beef.  Place meat in bottom of slow cooker and cover with 1/3 bottle of red wine. You can use leftover wine, or open a new bottle – the dryer the better.  Turn the slow cooker on high and cook for 3 or 4 hours.  Use a fork to break apart the pieces of meat – take out any large pieces and cut into smaller pieces, then return to the crockpot.  (If you have cooked from unfrozen meat, then you can skip this step.) 

 

Peel and slice the onion and add to the pot.  Add all remaining ingredients except sour cream and potatoes.  Cook on high for another 2 or 3 hours, stirring occasionally.

 

In the last 45 minutes, boil the potatoes.

 

Serve stew over boiled potatoes, with a dollop of sour cream on top, garnished with dill, if desired.  Delicious with a slice of tomato on the side, or how about some steamed broccoli or organic swiss chard!
