Slow Cooker Lasagne

Don't let the "slow cooker" title fool you - this recipe is just as fast and easy as heating a frozen lasagne from the grocery store, and is much better for you. Made with delicious naturally lean Roadapple Ranch ground beef.

Slow Cooker Lasagne (serves 6)

  • 1 lb Roadapple Ranch ground beef
  • 1 box of lasagne noodles (no cook OK)
  • 1 jar of spaghetti sauce
  • 1 1/2 cups of cottage cheese or ricotta cheese
  • 1 1/2 cups shredded St. Albert mozzarella cheese
  • 2 tbsp grated parmesan cheese

Brown ground beef (no draining required if you use RAR naturally lean ground beef!).  Spoon 1 cup of spaghetti sauce in bottom of 4 quart slow cooker.  Mix remaning sauce with cooked ground beef.  Place a layer of uncooked lasagne noodles on sauce in slow cooker.  Spread 1/3 of meat mixture on top of noodles.  Spread 3/4 cup of cottage cheese or ricotta cheese over meat sauce.  Sprinkle 1/2 cup mozzarella cheese over cottage or ricotta cheese.  Add another layer of uncooked noodles, 1/3 meat mixture, the remaining cottage or ricotta cheese and 1/2 cup mozzarella cheese.  Place another layer of uncooked noodles, meat mixture and remaining mozzarella cheese.  Sprinkle parmesan cheese over top.  Cook on low for 4 hours (do not cook much longer or it will be well done).  This lasagne needs no time to set - cut and serve directly from the slow cooker.
